Calling all vegetable lovers! Morning can be busy—but breakfast doesn’t have to be boring and basic—it can be packed with delicious vegetables. With a focus on seasonal vegetables and make-ahead components that are easy to assemble. Join our September Speaker Series as local author and garden-to-table expert, Willi Galloway, provides a road map to meal prepping your way to better breakfasts every day of the week. Willi is excited to share simple, delicious break0fast recipes and meal prep strategies that take the stress out of eating healthy, in the morning. She’ll walk us through her simple 5-step meal prep strategy for making healthy breakfasts easier for busy people, plus she’ll demo whipped ricotta toast, savory steel cut oatmeal and some mix and match recipes that are full of vegetables and super versatile!

WILLI GALLOWAY is the author of Grow Cook Eat: A Food Lover’s Guide to Vegetable Gardening and the cookbook Veggies for Breakfast: 100 Plant-Focused Recipes for Healthier Mornings. She is an award-winning radio commentator, writer, and former editor at Organic Gardening magazine. Willi writes about kitchen gardening and seasonal cooking and has taught joint gardening and cooking classes around the Pacific Northwest. She has hosted an online garden-to-table cooking show, GROW. COOK. EAT., fielded questions as the vegetable gardening expert on Seattle’s NPR station, KUOW, and written for Vegetarian Times and Apartment Therapy.  Her garden has been featured in Sunset magazine, and she currently lives and gardens in Portland, Oregon.
